Think fine bake shop scones are difficult to make? Not true! With this technique, anyone can make ridiculously delicious, ridiculously easy scones!

I’ve gotten so many comments and emails recently from readers who have loved our Ridiculously Easy Scones that I decided to round up 10 of our favorites into one post for your breakfast, brunch and baking enjoyment.

You might be asking how making scones could be ridiculously easy. It all goes back to a magical technique I discovered years ago for making the easiest, most delicious buttermilk biscuits. The easy method blew my mind because I’d never been able to make a decent biscuit, much less a stellar one.

The technique eliminates a tedious task that makes flaky biscuits super tender, flaky and delicious. This essential task is sometimes referred to as “cutting” the butter into the dry ingredients which creates small lumps of cold butter throughout the mixture. When the biscuits hit the hot oven, the butter melts and creates pockets of air which give biscuits that fabulous light flaky texture that biscuit lovers covet.

I actually ran to the kitchen after reading about this easy alternative to the cutting technique in a Cook’s Illustrated magazine. It was as easy as they described; simply melt the butter and chill the buttermilk then combine the two and stir. Voila! Cold lumps of butter suspended in the buttermilk.

The buttermilk mixture is then added to the dry ingredients to create those classic coveted butter lumps. I couldn’t believe it when, 30 minutes later, a pan of tall, golden, beautiful biscuits rolled out of my oven. They were tender, flaky and delicious… my wanna-be-Southern-biscuit-maker dreams come true!

How does all this biscuit talk relate to scones? This very same technique also works to create melt-in-your-mouth, almost-too-good-to-be-true scones. Seriously, it really is almost to good to be true!
