Skillet Chicken Gyros

A quick and easy homemade skillet version of chicken gyros!

Chicken gyros are one of my favourite foods! The chicken is seasoned and stacked in a vertical spit before being slowly roasted, with the juices from one layer dripping down onto the layer below, resulting a a super tender and juicy chicken that’s just packed with flavour! It can be challenging to make this chicken at home, since it requires a vertical spit roaster, and although I like to make an oven roast chicken shawarma version, this skillet version is super quick and easy to make! In this version, chicken is marinated with a tasty seasoning blend before being cooked on the stove top in a skillet! The gyros are made with the skillet chicken stuffed into pitas along with your favourite gyros fillings; I like lettuce, tomato, cucumber, olives, feta, tzatziki, and pickled red onions!

Prep Time: 10 minutes Marinate Time: 30 minutes Cook Time: 20 minutes Total Time: 30 minutes Servings: 6

A quick and easy homemade skillet version of chicken gyros!

ingredients
    For the chicken gyros:
  • 1 lemon, juice and zest (~1/4 cup juice)
  • 1/4 cup greek yogurt (or plain yogurt)
  • 3 cloves garlic, grated/minced
  • 1 tablespoon oregano
  • 1 tablespoon smoked paprika (optional)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 pounds boneless and skinless chicken breasts or thighs, cut into bite sized pieces
  • 2 tablespoons olive oil
  • For the gyros:
  • 6 pitas (optionally warmed/toasted) (gluten-free for gluten-free)
  • 1 1/2 cups lettuce, sliced
  • 1 1/2 cups tomatoes, diced
  • 1 1/2 cups cucumber, diced
  • 6 tablespoons pickled red onions, sliced (or fresh)
  • 6 tablespoons kalamata olives, sliced
  • 6 tablespoons tzatziki
  • 6 tablespoons feta, crumbled
directions
    For the chicken gyros:
  1. Mix the lemon juice, zest, yogurt, garlic, oregano, paprika, red pepper flakes, salt and pepper.
  2. Mix the chicken and marinade and let sit, covered, in the fridge, for 30 minutes to overnight, before shaking off any excess marinade.
  3. Heat the oil in a large skillet over medium-high heat, add the chicken and cook until cooked through and lightly golden brown on all sides, about 10-15 minutes.
