Components:
- 3 cups blended grape or cherry tomatoes
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/4 teaspoon crushed pink pepper flakes
- 3 tablespoons olive oil, divided
- Kosher salt and freshly ground black pepper
- 4 chicken cutlets
- 1 1/2 cups Panko*
- 1/2 cup freshly grated parmesan
- 1/2 cup all-intent flour
- 2 large eggs, overwhelmed
- 6 ounces fresh new mozzarella, sliced
- Contemporary basil leaves
Directions:
- Preheat oven to 400 levels F. Evenly oil a baking sheet or coat with nonstick spray.
- In a medium bowl, combine tomatoes, garlic, oregano, pink pepper flakes and 1 tablespoon olive oil season with salt and pepper, to taste.
