Pizza for breakfast? Why not?

As you all know, I love me a good hearty breakfast. That’s why I love breakfast versions of dinnertime favorites, like my Breakfast Lasagna Casserole, Breakfast Enchilada Overnight Bake, and Freezer Breakfast Quesadillas. And my latest addition to the bunch is…Breakfast Pizza.breakfast pizza cut into slices

This Breakfast Pizza starts out just like a regular pizza. You can use either homemade or store-bought pizza dough for the crust and top it with a thick, tomatoey pizza sauce and plenty of mozzarella cheese.

Then comes the sausage, and here’s where you can start to mix things up. Because you can choose mild or spicy Italian sausage, like on a regular pizza, or you can go with a your favorite breakfast sausage to give it a breakfast-time vibe. (Use a good plant-based sausage if you want to make it vegetarian.)close up picture of breakfast pizza

But the real finishing touch comes when the pizza is mostly baked. After about ten minutes in the oven, pull it out and crack four eggs right on top. Then pop it back in the oven and give it about six minutes for the eggs to set. And just like that, a regular sausage pizza becomes a Breakfast Pizza. But don’t worry…if you have any leftovers, they’re still good for lunch.ingredients for breakfast pizza

Breakfast Pizza

This Breakfast Pizza has all of your favorite breakfasts slapped on top of a pizza crust for the ultimate breakfast of champions.

Ingredients

  • 13 oz Pizza dough homemade or store bought
  • 1 & 1/2 cups mozzarella
  • 1/2 cup pizza sauce
  • 1 cup cooked sausage mild or spicy
  • 4 eggs

Garnish

  • Salt and pepper optional
  • 2 tablespoons fresh parsley chopped

Instructions

  • Pre heat oven to 450°F. Grease pizza pan.

  • Spread pizza dough into a 12” or 14” pizza round on your pizza pan.

  • Spread 1/2 cup of marinara sauce onto the pizza dough. Add more if you prefer.

  • Sprinkle pizza with cheese, leaving 4 open spaces for the eggs to be cracked later.

  • Add cooked sausage to pizza, avoiding the are as where the eggs will be.

  • Put your pizza pan into the oven. Cook pizza for 10 minutes.

  • Crack eggs carefully into the 4 open areas. Put the pizza back into the oven for 6 minutes.

  • Remove pizza from the oven. Top with salt, pepper and fresh parsley. Slice and serve.
