A straightforward recipe for pad thai that you can make with shrimp or chicken

This one-pan shrimp pad thai is from a new America's Test Kitchen cookbook called "Foolproof Fish."

A lot less is much more when it arrives to cooking fish (and shellfish), but that won’t necessarily mean it comes normally to many of us. 

I grew up observing “Wonderful Chefs” on PBS —  this was prior to the Foods Network debuted in 1993 —  where fancy chefs from all around the environment would usually sauté full fish above a industrial-grade gasoline stove. That particular demonstrate had quite minimal dialogue or instruction from the highlighted chefs, and my key takeaway from viewing how they cooked was, “Wow, I could in no way do that at dwelling.” I was a kid, of class, but all those early impressions of “chef food stuff” vs . “residence food stuff” caught with me in excess of the a long time, specifically when it came to fish.
